This is a best-in-class bottle of Champagne from a young, new wave of growers in Champagne taking over their family’s vineyards and ekeing an insane amount of finesse from them that leaves critics dumbfounded. Guiborat loves concatenating different terroirs to reveal new and more fulsome profiles. This bottling is a love letter to Chouilly called ‘from Caurés to Mont Aigu’, with prime first press juice from fruit from vines in Chouilly’s Caurés (planted in 1998 + 2005) combined with vines in Chouilly’s Mont Aigu (planted in 1970). Where Caurés is sharp and mineral, Mont Aigu is rich and riper. Together: a complete and versatile champagne. Only 1.5g/L dosage, fermented in stainless for 7 months, and does not undergo malolactic fermentation.
