Guiborat, Pur Prisme Grand Cru, Champagne (Base 2019)

Made from 100% Chardonnay grapes sourced from three prestigious Grand Cru vineyards in Cramant, Chouilly, and Oiry. This incredible grower makes terroir-driven, soulful wine in terribly small quantities (less than 2500 cases for the world!). The chalky soils of the Cotes des Blancs are on full display here as this elegant, pure, mineral wine really delivers in this remarkable Champagne vintage. 2019 is best since 2008, and likely the most exciting vintage in the last 20 years. This racy, versatile wine works as a cocktail or alongside just about any food you’re serving. There’s enough acidity and freshness here to pair with delicate things like oysters and crudos, but there’s also enough concentration and complexity to pair this with fried chicken, cheese courses and more substantial seafood dishes.
