Fred Savart’s delicious Champagnes are some of the easiest to enjoy of any producer we work with. Fred himself is one of the most fun people to hang out with in the business, and it's easy to see how passionate he is about wine in general after spending some time with him. There are plenty of ways to measure the greatness of a wine, but we always refer to what we’ll call the “empty bottle test.” In a crowded lineup of wines, what’s the first bottle to be finished? When Savart’s wines are in the mix, they are more often than not the quickest to go. The wines are engaging and extremely compelling, and from your first encounter you just can’t wait to try another sip.

Fred is based in Ecueil, where most of his holdings reside, with a handful of vines across into Villers-aux-Nœuds, both on the southern outskirts of Reims. His wines are largely based on Pinot Noir, with a smaller focus on Chardonnay. He’s is a third-generation vigneron, and under his guidance this has become a must-watch address in the region.  

It’s hard to pinpoint a specific detail that makes Savart’s bottles so special because they are clearly more than the sum of their parts. He checks all the right boxes in terms of diligent farming of privileged parcels and un-intrusive practices in the cellar, but these are wines born out of inspiration and intuition rather than any sort of set formula. Fred’s philosophy is rooted in capturing and conserving the clearest, truest picture of what mother nature provides each year above all else. His ability to routinely coax the very best expression of his terroir is up there with Champagne’s greatest producers, and we personally enjoy his delightful creations as often as possible.

There is an exuberant force, an energy and a personality to Savart’s wines that is disarmingly charming to the point where you might miss how complex they are. They stitch together waves of rich flavor and intensity over crackling acidity that leaves them poised and refreshing. Whereas some of the new wave examples from Champagne these days are so straight-edged that they hit you like a slap across the face, Savart’s are more like a pat on the back from an old friend. Bulle de Rosé is a bold, detailed, textured specimen made as a blend of 70% Pinot Noir, 22% Chardonnay and 8% Pinot Noir as red wine. All the fruit comes from Ecueil. Fermented in a combination of stainless and neutral barrels, with 6g dosage. Disgorged in June 2019.

"Due to be disgorged four weeks after my visit was the 2015 Extra Brut Premier Cru Les Noues, a new bottling from a parcel of Pinot Noir vines that used to go into Savart's l'Ouverture cuvée. Unwinding in the glass with a complex bouquet that mingles waxy citrus rind, red apples, berries and blanched almonds with hints of oyster shell and crushed chalk, it's medium to full-bodied and ample but incisive, with excellent depth at the core, a lovely spice of acidity and a long, precise finish."

" Produced exclusively from Chardonnay in an Ecueil lieu-dit better-known for Pinot Noir is the 2015 Extra-Brut Premier Cru Le Mont des Chrétiens, a small cuvée that's vinified in 500-liter barrels, without malolactic, and it was disgorged a few months ago with only two grams per liter dosage—one gram less than Savart's usual three for this bottling. Unwinding in the glass with aromas of lemon curd, white flowers, fresh melon, pastry cream and mandarin, it's medium to full-bodied, deep and chalky, with a tensile profile despite the warm vintage, concluding with a mineral finish. Note that this bottling used to be named Dame de Coeur. "

"The 2014 Le Mont Benoît is superb. The natural richness and depth of Pinot Noir from this site in Villers-aux-Noeuds gives the 2014 soft curves to match its voluptuous personality. Aging in cork, and the naturally finer bubbles that are the result, add to the wine’s textural finesse and nuance. Mirabelle plum, white flowers, mint and dried herbs, with veins of chalky minerality, are some of the signatures. Le Mont Benoît is 95% Chardonnay co-planted with 5% Pinot Noir, pressed together, aged on the cork, and bottled with 3 grams of dosage.
