Lightly sparkling with wild berry fruit and a tart, slightly saline finish - it is just so charming. Moreover, with no residual sugar and low alcohol (12%), it is a perfect choice for when the summer heat boils over like today. It will also pair perfectly with all sorts of summer dishes; anything from watermelon and feta salad to grilled sausages or gazpacho. Terrevive is a trailblazing estate run by Gianluca Bergianti and located just north of Modena in the province of Emilia-Romagna. Since the estate was founded in 2008, Gianluca has run this polyculture farm with an eye to elevate the traditional methods, techniques, and grape varieties of the area. The property is certified biodynamic and produces some of the most elegant and enticing Lambrusco wines we have ever found. These wines bear no resemblance to the industrial Lambrusco that was the norm for so long; they are dry, complex wines made with no additives including no added yeast, relying instead on grape must for their secondary fermentation. Perfranco is a sparkling rosato made from a local variant of Lambrusco di Salamino di Santa Croce. It is delicately aromatic with wild strawberry and cranberry on the nose. The palate is energetic, with tart fruit, frothy bubbles, and a salty twang on the finish.  This wine is dangerously easily to drink on its own but pairs perfectly with fried fish or fritto misto, and of course, salumi! A true taste of summer and a wine worth a special hunt!
