Guiborat loves concatenating different terroirs to reveal new and more fulsome profiles. This bottling is a love letter to Chouilly called ‘from Caurés to Mont Aigu’, with prime first press juice from fruit from vines in Chouilly’s Caurés (planted in 1998 + 2005) combined with vines in Chouilly’s Mont Aigu (planted in 1970). Where Caurés is sharp and mineral, Mont Aigu is rich and riper. Together: a complete and versatile champagne. Only 1.5g/L dosage, fermented in stainless for 7 months, and does not undergo malolactic fermentation.
