An ageworthy, highly textured, unique rosé which immediately calls to mind the unattainable Lopez de Heredia rosé. Dominio del Aguila is a project borne of the couple Jorge Monzon, a winemaker (who worked at Domaine de la Romanée-Conti and Vega-Sicilia) and Isabel Rodero, an architect. They’re determined to rescue old family vineyards, and farm those old, heirloom vines organically to craft true vin de garde. Dominio del Aguila has stolen many a critic’s heart over the past years, as the quality this domain is achieving is truly remarkable; prices on their top-tier wines are already on the high end for Spain’s offerings. Once you taste the wines, however, the prices make sense. This rosé is (for now) among their affordable offerings, and is a wine to enjoy now after 30 minutes of air, or, to lay down and age. The fresh, textured strawberry and hints of vanilla lend it a persistence on the palate that allows it to pair to a wide range of foods. It will take all the air you can give it—and will continue to reveal nuances of minerality and different dimensions to its fruit as it opens. A co-ferment of white and red grapes, and a noble ambassador for what Ribera del Duero can do in caring hands.
