A go-to summer red, this field blend is made mainly from the Bobal grape with other local grapes and nearly 30% of white grapes included as well. Bobal is widely planted across Spain, but its spiritual home is Castilla la Mancha. The Bobal grape thrives there in the dry continental landscape, and future rockstar, Javier Revert is now making this wine at Finca Sandoval in the Manchuela appellation. The certified organic grapes are grown at 750 to 1000 meters, and the vineyards are quite old (~80 or so years). He picks them, crushes them with his feet, and then co-ferments them in open top vats. Then the juice spends 10 months in clay tinajas (amphorae) to finish out the ageing before bottling without fining or filtration. Think of this like juicy, Spanish Beaujolais with a charming, Mediterranean herbal quality – it’s a perfect wine to enjoy with a chill on it and is great for everyday consumption or entertaining.
