The Paillard family has been cultivating vines in the Montagne de Reims since the mid-18th century. Current stewards, Antoine & Quentin Paillard, are the 8th generation to manage the vines. This cuvee is a 70% Pinot Noir 30% Chardonnay blend all from organically farmed vines in the Grand Cru village of Bouzy. Bouzy is known for producing the finest Pinot Noir- with its south-facing slopes, the grapes get to fully ripen. As a result, the wines from Bouzy tend to be more rich and powerful with very expressive noses. Although labeled as extra brut, on the palate there is a sense of ripe, sweeter fruit while also maintaining impeccable balance and drinkability. A lovely bottle that checks all the right boxes.
